FN 162 (Introduction to Food and Nutrition)

COURSE DESCRIPTION:

This course examines the scientific concepts of nutrition relating to the functioning of nutrients in the basic life processes. Emphasis is on individual needs, food sources of nutrients, current nutritional issues and diet analysis.

OFFICE HOURS:

Office hours have been set up through the ConferZoom utility on your canvas navigation page. I will be available for any student that needs help with anything concerning this class, such as help with the study guides, tests, problems with their Canvas utility, you name it. Maybe you just want a one on one chat in order to ask a few questions that you would not want to ask in a group setting. These meeting are set up once a week and you may book a 15-minute session through ConferZoom. They are recurring meetings every Monday from 10:30 a.m. until 12:30 a.m. I will be available for you during that time. You are not required to schedule any of these meetings, but they are open to you. You do not have to use a webcam, but you need a functional microphone so we can communicate. Using the chat box in a 15-minute meeting takes up too much time, although you are free to use that also. When you first use ConferZoom, it will ask you for your e-mail and you must set it up. Hey, the best thing to do is to message me, if you run into any glitches. If you think you will need more than 15 minutes, you may book back to back appointments but no more than two. It is not a problem for me to meet with you.

This book has been ordered through the Valley Bookstore, check with them about purchasing it. The first ISBN listed below is the actual one you need and has been ordered, it has the entire eBook included. The second one, you might want to consider, as it also has the eBook but also has a hard copy of the book included, that one was not ordered by myself as it was more expensive, but sometimes when you taking the open book tests, it helps to have a hard copy of the book, it is up to you, but you definitely need the first one.

COURSE OBJECTIVES

At the successful completion of this course, the Student will be able to....

SLO #1*

Students will demonstrate the ability to apply current dietary guidelines and nutrition recommendations to their personal diets by completing a three-day personal diet study including Recommended Daily Allowances and the daily values following National Nutritional Standards, which will be judged by the standards provided by the Recommended Daily Allowances and National Nutritional Standards.

SLO #2*

Students will demonstrate basic knowledge of digestion, absorption, and metabolism by completing a chart on the digestion of their meals, showing digestive organs and absorption of nutrients, which will be judged against accurate information outlining digestion, absorption, utilization, and elimination of proteins, carbohydrates, and fats and micro-nutrients.

SLO #3*

Students will demonstrate the ability to apply good nutrition standards to health, fitness, and disease across life span by writing a paper demonstrating knowledge of the effects of nutrition across life span. Students and instructor will provide a valid critique of the paper based on inclusion of issues such as weight, health, fitness, genetics, and diet habits in relation to life span.

*These three Student Learning Outcomes are measured by 15 questions that are included on the final exam. Students will not know which of these 15 questions are also used to analyze the SLOs for this class. The SLO’s listed above also mention another method of evaluation. I prefer my method, as it keeps students honest and prevents them from having others do the assignments for them. This keeps the data and analysis accurate. The data from these 15 questions is used to analyze whether these three particular SLOs were met. Each of the three SLO's has five questions associated with that topic. The scoring is as follows:

5 out of 5 correct excellent mastery of that particular SLO
4 out of 5 correct good mastery of that particular SLO
3 out of 5 correct acceptable mastery of that particular SLO. (SLO met)
2 out of 5 correct marginal understanding of that particular SLO (SLO not met)
0-1 out of 5 correct lack of mastery of that particular SLO (SLO not met)

INSTRUCTOR REQUIREMENTS

Students are required to purchase the text for this class.
The five tests are open book and notes. This makes purchasing a book very necessary.
Students are required to have access to a laptop or PC and internet access.
Students are required to check the Canvas website for this course on a daily basis.
Students are required to submit exams/quizzes and assignments by the deadlines posted.
Students are required to participate in the Zoom video conferences for this class, during the dates and times posted on Canvas.
Students are required to become familiar with the following three websites (utilities).

Zoom a video conferencing website that is used for this class (free access)
Launchpad This utility (website) is one that you will have access to when you purchase the book.

You don't have to use a camcorder, but you may. You don't even need a microphone, but it helps.

Regularly Scheduled Class Zoom Meetings

I have scheduled weekly (recurring) zoom meetings on selected dates. These are recommended meetings. There will be a very short three question quiz that you must take in order to receive credit for attending the meeting. This quiz has only 3 questions that will ask what the three-digit code was for that meeting. There will be three times a code will be given to you during the meeting, once at the beginning, once in the middle of the meeting and once at the end of the meeting. At the end of the meeting, I will activate the test and you will enter the three codes. All you have to do is jot the code down during the meeting. You must take the test in order to receive the 15 points of credit for attending the meeting. However, if you miss one of the meetings and watch the recording of the meeting later, you can still take the zoom 3 code quiz. These are open for the entire class. The reason I do not ask you to memorize everything discussed in these meeting is because my experience has been that students worry too much about what questions are going to be asked on the test. That interferes with learning. This creates more of a relaxing atmosphere and allows me to instruct you as if I was standing directly in front of you in a classroom. This is basically a free 15 points just for attending. These zoom conference (class) meetings will cover topics that are relevant to the upcoming tests as well as very important information on nutrition that you will not hear elsewhere. Graded Assignments and Due Dates

Do not be overwhelmed by looking at all of the class assignments when you click the box below.

The 7 ConferZoom video quizzes take 1 minute each and are a free 15 points. I give you the three codes to enter on the simple 3 question quiz during the ConferZoom meetings. If you miss the meeting, it will be recorded and posted in the modules area for you to view later and get the three codes. You have till Sunday at midnight of that week to take the ConferZoom 3 question quiz.

The Discussions are not difficult to complete and not difficult to score 100% on. They don't take that long to complete. Also, the video quizzes are short and simple, you will see. The remaining discussions are bonus points discussions. You have plenty of opportunity to raise your grade with all of the bonus assignments available. However, you are not required to complete any of these bonus assignments. They are used to raise your grade only.

All grades will show as percentages in the grade area, not points (with the exception of the bonus assignments. They will display as points in your grade area). The due dates for all assignments are listed on the home page and in the modules area (not on the syllabus or syllabus page).

SPECIAL NOTE

I am here to help you learn. If I observe that there are unusual circumstances as to why someone is not performing well, I will take this into account. This class is not designed to discourage someone that is unaware or not concerned about nutrition from signing up for the class. In fact, those are the individuals that should take this class. Should you feel that you fall into this category, you must visit with me early during the course. However, as a general rule, I hold all students accountable to the same criteria.

CHEATING POLICY

Cheating constitutes academic dishonesty and, in general will be handled as part of the course grading process. Penalties may range from no credit for the assignment up to and including exclusion and/or and “F” grade for the course. As a general rule, I handle this on a case by case basis.
